Pineapple Kimchi Fried Rice

Ingredients

½ teaspoon olive oil

½ cup ham, chopped

½ teaspoon oyster sauce

2 teaspoon soy sauce

½ cup mixed veggies (corn, peas, carrots, and green beans)

⅓ cup pineapple chunks

⅓ cup kimchi

½ teaspoon garlic powder

½ teaspoon garlic salt

Pinch of salt

Freshly ground black pepper

1 cup cooked white rice (preferably day old rice)

1 egg

½ teaspoon rice vinegar

Pinch of sugar

Directions

1. In a large skillet, heat the oil over medium heat. Add ham, oyster sauce and 1 teaspoon soy sauce. Stir to coat the ham and sauté for 3-4 minutes.

2. Add mixed veggies, pineapple and kimchi. Season with garlic powder, garlic salt, salt and pepper. Cook until vegetables are tender, 5 minutes.

3. Add rice and one egg. Scramble the egg and mix in with vegetables, ham and other ingredients. Add rice vinegar, the remainder of the soy sauce and a pinch of sugar. Sauté on high heat for 1-2 minutes. Serve hot.
