M&M’S Holiday Explosion Cake

This explosion cake looks like it was made from scratch, but it actually uses boxed cake mix. Don’t worry, your secret is safe with us. Once you bake your cakes, all you need to do is carve out the center, layer with delicious frosting and fill the middle with M&M’S® Chocolate Holiday Candies. The best part? M&M’S® will come pouring out as soon as you cut into it.

1 boxed birthday cake mix

Water, vegetable oil and eggs, as called for on cake mix

2 cans store-bought vanilla frosting

1 pack of food coloring (to dye frosting, optional)

¾ cup holiday sprinkles

Directions

1. Preheat oven to 350°F. Grease two 8-inch round cake pans and line each pan with parchment paper, then grease the parchment paper. In a large bowl, prepare the cake mix according to the package directions. Divide evenly between the pans. Bake as directed. Cool the cakes for 10 minutes, then run a knife around the side of each pan to loosen the cakes. Gently transfer the cakes from the pans to a cooling rack and remove the parchment paper. Cool completely.

2. Flatten the cake layers by trimming off their domed tops, then cut each layer in half horizontally so you have four layers. Cut a circle from the center of two layers, using a 4-inch round cutter. Tint the frosting with food coloring, if desired, and mix to combine.

3. To assemble, place an uncut cake layer on a cake stand or serving platter, then spread ⅓ cup frosting on top. Top with one of the cutout layers, then spread ⅓ cup frosting on top. Top with the second cutout layer and spread ⅓ cup frosting on top.

4. Fill the center with M&M’S® Chocolate Holiday Candies and sprinkles. Gently press the candies to level them, then top with the remaining uncut cake layer. Frost the side and top of the cake and decorate as desired.
