That’s why we love this millet Brussels sprouts recipe from Weeknight Society, a website and free app that plans super-speedy, wholesome meals for the whole fam. Instead of plain-Jane quinoa, it’s made with millet, a healthy (and gluten-free) grain that’s rich in fiber, low in glucose and cooks quickly. It pairs perfectly with tart dried cranberries and our favorite veggie.

4 servings

1½ cups millet

2 tablespoons extra-virgin olive oil

1 onion, sliced

2 garlic cloves, minced

Kosher salt and freshly ground black pepper

1 pound brussels sprouts, sliced

1 cup dried cranberries

½ cup grated Parmesan cheese

1. Bring 4 cups of water to a boil in a large saucepan. Add the millet and cook until tender, 15 to 17 minutes. Strain and set aside.

2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic; season with salt and pepper. Cook, stirring frequently, until softened, about 5 minutes. Add the brussels sprouts and cook until softened, about 5 minutes.

3. Mix the millet, dried cranberries and Parmesan into the brussels sprouts. Serve immediately.
