Juicy Green Pineapple Smoothie with Mint, Basil and Spirulina

If we’re being honest, sometimes we skip smoothie day because hauling out the blender (and then cleaning it) is just too much effort. We love Emily von Euw’s juicy green pineapple smoothie with mint, basil and spirulina from Rawsome Superfoods because it cuts a lot of corners. Case in point: Instead of juicing a lime, you throw the whole damn thing in.

“I love citrus and the tanginess it lends to recipes, so please note that this is a pretty limey drink,” Euw explains. “If you aren’t too keen on that, leave half of the lime out.”

Did we mention it’s really nutritious, too? Mint is excellent for helping with digestion (it tames an upset or bloated tummy). Spirulina is a blue-green algae and provides protein, iron, iodine, B12, beta-carotene, vitamin A and other good stuff. It’s pretty magical.

Avocado Shake with Salted Chocolate Sauce

Ingredients

1 heaping cup frozen pineapple chunks

⅔ cup chopped cucumber

½ cup nondairy milk

⅓ cup packed mint leaves

⅓ cup packed basil leaves

1 teaspoon spirulina powder, as desired

1 lime, peeled and chopped

1 teaspoon maple syrup

½ cup water

4 ice cubes

Fresh mint leaves, for serving

Directions

1. Blend the pineapple, cucumber, milk, mint, basil, spirulina, lime, maple syrup and ½ cup water in the bowl of a blender until smooth.

2. Serve over ice with fresh mint leaves.
