Guacamole is awesome. We'd eat it at every meal if we could--and some days we do (live your life!). Recently, we've been kicking things up a notch by adding in different ingredients besides the basics. Here, we present to you five irresistible, easy guacamole recipes. Grab some avocados and tortilla chips, and let's go.

Recipe 1

Line a baking sheet with aluminum foil and place 2 poblano peppers and 1 ear of corn (shucked) on it. Brush each vegetable with 1 teaspoon olive oil. Roast in a 450°F oven until lightly charred, 8 to 10 minutes. Cool to room temperature. Chop the poblanos and cut the corn off the cob. In a large bowl, mash 2 avocados with a fork. Stir in 1 tablespoon lime juice1 chopped red onion1 minced garlic clove and 1 cup chopped cilantro. Season with salt and pepper to taste.

Recipe 2

In a large bowl, mash 2 avocados with a fork. Stir in ½ cup goat cheese, mashing it with the avocados. Add 1 tablespoon lime juice, 1 chopped sweet onion, 1 minced jalapeño, 1 cup chopped cilantro and 1 cup shredded Jack cheese. Season with salt and pepper to taste.

Recipe 3

Chop 1 cup sun-dried tomatoes. In a large bowl, mash 2 avocados with a fork. Stir in 1 tablespoon lemon juice1 cup minced scallion1 minced garlic clove½ teaspoon cayenne pepper½ cup chopped basil and the sun-dried tomatoes. Season with salt and pepper to taste.

Recipe 4

Line a baking sheet with aluminum foil and arrange 6 pieces of bacon on it. Cook the bacon in a 400°F oven until crisp, 10 to 12 minutes, then let cool to room temperature. Chop the bacon. In a large bowl, mash 2 avocados with a fork. Stir in 1 tablespoon lime juice1 chopped red onion1 minced garlic clove1 teaspoon chile powder and 1 cup chopped cilantro. Crumble the bacon and mix it in. Season with salt and pepper to taste.

Recipe 5

Peel and dice 1 mango. In a large bowl, mash 2 avocados with a fork. Stir in 1 tablespoon lime juice1 minced serrano chile1 cup minced scallion1 cup chopped parsley and ¼ cup chopped mint. Stir in the diced mango. Season with salt and pepper to taste.
