If you’re on TikTok even the slightest bit, we’re willing to bet you’ve seen an iteration of summer’s hottest snack. And if you’re not on TikTok, allow us to introduce you to cowboy caviar. Also called Texas caviar, it’s a confetti-like mix of black-eyed peas, beans and colorful vegetables tossed in a vinaigrette, and yeah, it’s as good as it is trendy. (Although, fun fact, its origins date back to Texas in the 1940s, not the app.) Is it a salad, or a chip dip? We say both—dig in.

Cowboy Caviar
Ingredients
One 15-ounce can black beans, rinsed and drained
One 15-ounce can black-eyed beans, rinsed and drained
1 cup corn (frozen, or fresh from about 3 ears)
1 pint cherry tomatoes, diced
1 bell pepper, seeded and diced
½ red onion, diced
1 to 3 jalapeños, seeded (if desired) and diced, to taste
¼ cup cilantro, chopped
Juice of two limes
1 tablespoon red wine vinegar
2 garlic cloves, minced
⅓ cup olive oil
Kosher salt and freshly ground black pepper
Tortilla chips, to serve
Directions
1. In a large bowl, combine the black beans, black-eyed peas, corn, tomatoes, bell pepper, onion, jalapeño and cilantro.
2. In a small bowl, whisk together the lime juice, red wine vinegar and garlic. Whisking constantly, slowly stream in the olive oil. Season to taste with salt and pepper.
3. Pour the dressing over the vegetables, and gently toss to thoroughly combine. Taste and adjust the seasoning. Serve with tortilla chips.
