What’s even better than a heaping plate of cheese and crackers? (Not a trick question.) Answer: our ultimate cheese plate with roasted grapes. Tossing a big bunch of grapes into the oven is super easy, and the results are salty-sweet and look impressive, like something you’d get on a fancy restaurant’s cheese board. Break out this recipe for your next cocktail party—or make it for dinner and eat the whole thing yourself.

Psst: We chose ricotta, Brie and sharp cheddar to showcase on this board, but you can serve any type of fromage you fancy. Need a roadmap to start? Aim for something creamy, something firm and something pungent (but know that any cheese is a good choice).


Ingredients

½ pound purple grapes

½ pound green grapes

2 tablespoons extra-virgin olive oil

Kosher salt and freshly ground black pepper

4 sprigs fresh thyme

4 sprigs fresh rosemary

6 ounces ricotta cheese (or another cheese)

6 ounces Brie cheese (or another creamy cheese)

6 ounces sharp white cheddar cheese (or another firm cheese)

1 cup smoked almonds

8 fresh figs, quartered

Crackers and sliced baguette, for serving

Directions

1. Preheat the oven to 450°F and line a baking sheet with parchment paper.

2. Arrange the grapes in clusters on the baking sheet. Toss the grapes with the olive oil, salt and pepper. Nestle the thyme and rosemary among the grapes.

3. Roast until the grape skins are blistered and wrinkled, 12 to 15 minutes.

4. Transfer the grapes to the center of a large board. Arrange the ricotta, Brie, cheddar, almonds and figs around the grapes. Serve with crackers and baguette.
