Everybody’s birthday should feel special, and baking a cake is a great first step. But we’re not all professional bakers…and we love a shortcut. Skip the Pinterest fail in favor of something more realistic, like this recipe for birthday cake rice cereal treats. They’re festive and fun, but way easier to make than a triple-tiered masterpiece. Plus, they’re easy to slip in a lunchbox or send with your kid for a class celebration (if their school allows homemade treats, of course).
Birthday Cake Rice Cereal Treats
Nonstick cooking spray
3 tablespoons unsalted butter
One 10-ounce package marshmallows
6 cups crispy rice cereal
3 tablespoons rainbow sprinkles, plus more to garnish
2 cups white chocolate chips
1. Spray a 9-by-13-inch baking dish and silicone spatula with nonstick cooking spray. Set aside.
2. In a large saucepan over medium heat, melt the butter. Add the marshmallows and stir until melted. Remove from the heat and stir in the cereal and rainbow sprinkles.
3. Working quickly, use the prepared silicone spatula to evenly press the cereal mixture into the prepared pan. Try not to pack the cereal too firmly so the treats stay light and fluffy.
4. In a large microwave-safe bowl, melt the white chocolate in 30-second increments, stirring until completely smooth. Spread evenly over the cereal treats. Top with more rainbow sprinkles. Cool until completely set, then slice into 2-inch bars.
