When we’re in the mood for a meal that’s quick, comforting and easy to execute, we can always turn to Ree Drummond, aka the Pioneer Woman. So when we chatted with her recently at an event launching her new Purina dog treats, we just had to find out what her favorite cooking utensil is. Drumroll, please…

A whisk—but not just any whisk. A flat whisk.

“One of my favorite kitchen tools is a flat whisk,” Drummond told us, “which you can whisk flat against the bottom of a skillet.” If you’re like, I thought all whisks were the same, you’re probably thinking of a balloon whisk—that’s the standard, bulbous-shaped whisk you might use to whip up scrambled eggs. But a flat whisk is a little different. Also known as a roux whisk, it becomes flat when you press it against a saucepan or skillet, scraping up all the browned bits (read: the good stuff) at the bottom of a pan, which makes it essential for deglazing. “I use it for any pan sauce or gravy,” says Ree.
