What you’ll need: 2 medium zucchinis, 1 avocado, juice from 1 lemon, 2 tablespoons olive oil and 1/4 cup chopped dill.
Step 1: Time to spiralize! Use a spiralizer to turn the zucchini into noodles. Gently separate with your fingers and place the zoodles in a mixing bowl.
Step 2: Blend the avocado, lemon juice, olive oil and dill into a food processor to make the sauce. It should be smooth and creamy, with no avocado chunks.
Step 3: Toss your zoodles in the avocado sauce, then sit back and enjoy with a nice glass of red.
