Tuesday: Tomato Salad with Grilled Halloumi and Herbs
Thanks to squeaky, tangy halloumi cheese, this elegant, seven-ingredient dish is more satisfying than you might expect. Serve it with crusty bread, pasta, rice or greens to make it even more filling. If you can’t find satisfactory tomatoes in the dead of winter, use an equal weight of cherry tomatoes.
Wednesday: Easy Stir Fried Rice Cakes with XO Sauce
Is it just us, or are rice cake stir fries all over your TikTok For You page lately too? Like tofu, they absorb the flavors of whatever they’re prepared with. Here, they’re cooked in XO sauce, a spicy seafood condiment that’s beloved for its sweet, smoky, umami-rich taste.
Thursday: 20-Minute Mushroom Stroganoff
Jamie Oliver’s vegetarian twist on beef stroganoff will win you over at first bite. It’s delightfully tangy, thanks to capers, cornichons and sour cream. Don’t stress over the quick flambé—it’s an easier task than you think.

Sunday: Spicy Shrimp Tacos with Mango Salsa
Prepare the salsa ahead and this dish will come together in 10 minutes flat, since all you’ll need to do is sauté the quick-cooking shrimp and toast the tortillas. Bonus points for serving the tacos with fresh mango guacamole.
