Nachos are the ultimate comfort food. But between the addictive crunch of the tortilla chips and the oozing, melty cheese dripping off the sides, it’s definitely easy to overeat and devour the whole plate. Here, a much healthier way to indulge—without sacrificing any flavor.
What you need: Seasonal squash, olive oil, salt, pepper and a baking sheet.
Step 1: Preheat the oven to 375°F; slice the squash into ½-inch-thick pieces.
Step 3: Brush the squash with oil, sprinkle with salt and pepper, and then bake for about 15 minutes, until the edges get crispy.
Step 4: Remove the baking sheet from the oven and let the squash cool for five minutes before adding your toppings of choice. We vote for cheddar, black beans, salsa and avocado.
Step 5: Pop the baking sheet back into the oven until the cheese melts.
Step 6: Eat the whole tray.
