Now, we have a whole new reason to stan the comedic actress and writer: her ridiculously easy recipe for spinach-artichoke puffs.
We’re Drooling Over Mindy Kaling’s Recipe for Easy Spinach-Artichoke Puffs
She shared a video to Instagram to show her fans how to prepare the ooey-gooey starter. “Well, we all need some comfort food,” Kaling’s post reads. “Here’s an extremely easy artichoke/spinach/cheese crescent roll recipe I made which you can eat while you doomscroll through your phone.”
While she didn’t post exact measurements, the recipe is one that you can easily riff on and figure out as you go along (because there’s really no wrong way to combine cheese, dough, spinach and artichokes). To make it easy for you, we guesstimated exact measurements below, but feel free to alter them as you see fit—the puffs are basically foolproof.
How to Make Mindy Kaling’s Spinach-Artichoke Puffs
- One 8-ounce package cream cheese
- ½ cup shredded mozzarella cheese
- ½ cup shaved Parmesan cheese
- 1 cup marinated artichokes, chopped
- 1 cup frozen spinach, drained and squeezed
- Salt, pepper and crushed red pepper flakes, to taste
- One 8-ounce tube Pillsbury Crescent Roll dough
Step 1: Preheat the oven to 350°F. Line a baking sheet with nonstick foil.
Step 2: Add all the filling ingredients to a large bowl. Mash them together with a fork until evenly combined.
Step 3: Unroll the Crescent Roll dough. Add a mound (about one heaping tablespoon) of filling to each triangle of dough and roll it from point to point to form a small ball. Tuck the filling in under the dough to ensure that it’s encased as much as possible.
Step 4: Place the balls on the prepared baking sheet. Bake for 10 to 13 minutes, or until the dough is golden brown and the filling is melted.
