We’re only a few weeks away from fall, and let’s be honest: We can barely wait. So we’re setting the mood with easy, tasty early fall dinners (bring on the butternut squash and soup). Here’s what to cook every night this week (grocery list included).

2½ pounds bone-in, skin-on chicken pieces (mix of thighs and legs)
One 4½-pound whole chicken
8 ounces bacon
2 pounds Italian sausage
12 ounces Brussels sprouts
2 medium-to-large butternut squash
3 ears corn (about 1½ cups kernels)
1 red bell pepper
1 head broccoli
2 pounds baby potatoes
9 garlic cloves
2 yellow onions
1 zucchini
2 shallots
1 lemon
1 large bunch lacinato kale
1 bunch broccoli rabe
2 stalks celery
2 persimmons
1 bunch fresh thyme
1 bunch fresh parsley
1 bunch fresh chives
1 bunch fresh basil
1 small bunch fresh rosemary
1 small bunch fresh oregano
1 small bunch fresh tarragon
Whole milk

Monday: Dijon-Maple Chicken with Brussels Sprouts and Butternut Squash

Mondays call for one-and-done dinners with minimal cleanup. Psst: Roast that other butternut squash tonight—it’ll come in handy later in the week.
