Another salad for lunch today? How thrilling. News flash: There are more exciting ways to eat a vegetable-focused meal. Like this collard leaf wrap that’s packed full of crunchy veggies, delicious hummus and peanut sauce.
What You Need:
- 1 large collard leaf per wrap
- An assortment of finely cut veggies
- Peanut sauce
Step 1: Lay the collard leaf flat on a cutting board with the stem facing up. Carefully slice away the tough stem with a chef's knife.
Step 2: Spread some hummus in the middle of the leaf.
Step 3: Pile on the veggies. Bell peppers, carrots, sprouts—you can add on whatever you’d like. Drizzle with peanut sauce.
Step 4: Fold the long sides inward first so that they meet in the center of your wrap. Then fold up the bottom part of the leaf and roll the rest of the way until everything is tightly wrapped together.
