You bought fresh herbs to add the finishing touches to an heirloom tomato salad. But that took only a few sprigs and now you’re left with an entire bag’s worth. What to do?
The solution is simple: Freeze your leftovers. Here’s how to do it.
1. Rinse and finely chop any herb--basil, mint, parsley, cilantro--first removing stems.
2. Fill an ice cube tray with your choppings (aim for about 1 tablespoon’s worth in each slot).
3. Top off the tray with water, pouring slowly so you don’t send your greens splattering all over the place.
4. Pop it in the freezer for about 24 hours and then pack your herb cubes into plastic baggies.
Use the cubes in soups or sauces. Then pat yourself on the back for being a domestic goddess.
