Mmmmm…bacon. Whether it’s wrapped around eggs or in a BLT, we love it through and through. But what if you could replicate that deliciously crispy, smoky quality with--wait for it--shiitake mushrooms? Turns out, you can, and the results are kind of amazing. All you need is a little salt, olive oil and paprika, plus a dash of liquid smoke. (Don’t panic. You can buy it on Amazon.) Bake for about 25 minutes and magic: mushroom bacon.
