You’re on your own for dinner, so what the heck are you going to make? You’d like to be creative, but only if the portions are right. Here, nine delicious recipes, easily made for you and you alone.

Think of it as a one-bowl wonder, garnished with the best: fresh lime juice, basil and roasted peanuts. Toss any extra chicken in the freezer for later in the week.
Search your cupboards for brown rice, farro or quinoa, then supplement with chicken, black beans and salsa (don’t forget the avocado).
