Whether you’re celebrating a romantic evening with your sweetheart or binge-watching rom-coms with your best friends, Valentine’s Day calls for a classy (but super-easy) cocktail. We’re swooning over this gorgeous five-ingredient cocktail by Jacquelyn Clark of Lark and Linen. Best of all, it’s ready in 15 minutes.
What you need: 1/3 cup blackberries (plus a few extra for garnish), 1/3 cup water, 1/3 cup sugar, one bottle of Champagne (go on and splurge, it’s a holiday) and a few springs of thyme.
How to make it: In a small saucepan, combine the blackberries, water and sugar and bring to a boil. Turn down the heat and let the simple syrup mixture come to a simmer for 10 minutes. Strain the blackberries from the syrup. Fill four Champagne flutes with 2 tablespoons of the syrup mixture and fill the rest of the flute with Champagne. Garnish with thyme and blackberries.
