Spring-ready rice pudding from RiceSelect

The creamy, chilled dessert recipe is simple: Combine eggs, milk and vanilla pudding mix, then stir in raisins, cinnamon, nutmeg and cooked Jasmati® rice (a jasmine-style rice grown here in the U.S.). Cook until this comes to a boil and thickens.
Cool and pour over a basic baked crust (of butter, flour, powdered sugar and chopped pecans) and a middle layer of cream cheese and powdered sugar.
Round out the whole thing with a final layer of whipped topping and toasted pecans. And voilà--you?ve got a seasonally appropriate, easy-to-transport, crowd-pleasing dessert to serve 18?or 9 considering seconds (no judgment).
