Pop-up restaurants might seem like they're a dime a dozen (with everyone from John Fraser to Martha Stewart getting in on the action), but the James Beard Foundation gives us a good reason to embrace the trend with their new, worthy-of-the-buzz culinary pop-up, JBF LTD.

From April 12 through May 14, the foundation is setting up shop in Chelsea Market, for a series of $75 prix-fixe dinners from a lineup of top chefs from around the country.

Three-Michelin-star-winner Laurent Gras kicks off the action from April 12 to 16, followed by Aaron Israel of Brooklyn's Mile End, who will host a Seder on April 19 that puts your matzo balls to shame. Other big names include Miami's Michelle Bernstein and David Kinch of California's Manresa, plus a dream pairing of Iñaki Aizpitarte, of Paris's Le Châteaubriand, and Momofuku's David Chang (May 3 to 7).

Tickets go on sale today and are likely to sell out quickly. And while you'll want to move fast on these confirmed dates, you can also sign up to get the latest dinner additions as they're announced.

Alternately, drop by the temporary restaurant any day for a café-style lunch, which will also feature tastings, shopping and live cooking demos.
