While we typically associate food trucks with grilled cheese, waffles and other minimally nutritious eats, the Cinnamon Snail proves that you can't always judge a menu by its vehicle.

Already a Hoboken staple, the vegan food truck just started making the rounds in NYC and is already attracting some pretty massive lines.

Currently on the seasonal menu are the popular ancho-chili seitan burger with beer-simmered onions ($9) and a smoked-portobello-mushroom carpaccio served on grilled focaccia ($9). We ordered the hoisin-glazed seitan barbecue topped with kimchi, and while we were skeptical, the Japanese soy meat was so juicy that we never missed the beef.

If you can get there early enough, try the gluten-free maple-pecan waffles ($9) or the spicy scrambled-tofu burrito ($8) from the breakfast menu (served until 11 a.m.), and be sure to pick up an apple-cider doughnut ($2) or peanut-butter blondie ($2) for dessert.

For those looking to feed a crowd, the Cinnamon Snail also caters and takes call-ahead orders. Locations change daily and are updated on the truck's Facebook and Twitter pages.

You might blow your lunch hour waiting on line, but this light, organic fare is worth the Snail's pace.
