Let loose at Raaka, a Brooklyn-based chocolatier that now holds tours and classes at its spanking-new Red Hook facility.

You may have seen the illustrated wrappers at Whole Foods or wherever you buy your groceries. But if you haven’t yet tasted the small-batch goods, you’re in for an even bigger treat. Raaka uses a low-temperature process to keep its chocolate bars as close to raw as possible. By skipping the typical roasting method, the natural flavor of a cacao bean (which is shockingly fruity) stays intact. Then from there, the crew adds infusions like New Hampshire maple sugar and vanilla rooibos tea. (Our personal favorite: a bourbon angel’s-share joint.)
