Creator Catherine Weiss, a massage therapist at the Four Seasons Hotel in Beverly Hills, tired of the watery stuff at her grocer. So one day off, she made her own nondairy treat using cashews, coconut milk and unrefined evaporated cane juice in carefully calibrated amounts. When Weiss shared some with the Four Seasons’ chef, he added it to the menu at the hotel’s fancy Italian restaurant, Culina.
Flavors rotate: We love the chocolate peanut butter, a pure-tasting mash-up of that dynamic duo. Ditto the pint of chocolate brownie that was rich and gooey yet not overly sweet. And frankly, we prefer the beet-based red velvet to its high-calorie namesake.
