The superquick healthy lunch is now an option if you work in the Loop near Clark and Lake, where a new Chicago company, Farmer’s Fridge, has just installed its first-ever vending machine.
And we’ve gotta say, this machine is a beaut.
Made from reclaimed wood with a touchscreen that takes credit cards and sends e-mail receipts, it makes sense in so many ways.
The salads are made fresh each morning, packaged in recyclable plastic jars--the machine has a bin for empties--and stocked at 10 a.m. For $8, you can buy one of seven options, plus protein add-ons for $2 to $4 and snacks like sliced veggies and hummus for $3.
We tried the Mediterranean salad, a blend of mixed greens, artichokes, white beans, tomatoes, pine nuts and other goodness with red-wine vinaigrette. Prettily layered in the jar to keep the ingredients from getting soggy, it was crisp and vivid, with flavor for days.
Come 3 p.m., your brain will thank you for the boost.
