The school year is drawing to a close, but we?re adults, so there?s no reason not to keep up on one of our favorite summer subjects: drinking. Sharpen your pencils for these seminars on beer, wine and cocktails:

This Thursday, during Chicago Craft Beer Week, 5 Rabbit Brewery invites you to get your hands dirty with chef Grayson Schmitz of Top Chef: Texas. The brewery will serve beer pairings with each course you help cook at this family-style dinner ($125) at Logan Square Kitchen. Proceeds support hunger-relief programs via the Chicago Food Depository. 2333 N. Milwaukee Ave.; info@5rabbitbrewery.com or 5rabbitbrewery.com

Wine-centric River North spot BIN 36 has resurrected a longer, more intensive version of its BIN School, and this week?s course is ?Wine 102: Far Out Grapes from Far Out Places? (May 22 at 6:30 p.m.; $45). Class resumes in June with ?Wine 103: Food and Wine Synergy.? 339 N. Dearborn St.; 312-755-9463 or bin36.com

At Filini--in the instant-icon Jeanne Gang building that houses the Radisson Blu Aqua Hotel--there?s a new series of mixology classes dubbed ?Crafting the Classics.? The free, 30-minute lessons are hosted by Eric Hay (Bangers & Lace, Bar DeVille), who has a knack for muddling fresh ingredients with premium spirits. First Tuesday of the month at 5:45 and 6:30 p.m. Next up on June 12: the Whiskey Smash. RSVP to info@filinichicago.com; 221 N. Columbus Ave.; 312-477-0234 or filinichicago.com
