In San Francisco, we sure do love our oysters...and we take them very seriously. Which is why we thought you’d want to know about this: bespoke oysters. In a place where we have personalized everything—suits, backpacks, hats, watches—it was only a matter of time before the custom concept infiltrated the food world. And wild as it is, we couldn’t be more excited. 

Waterbar is working with an oyster purveyor in Washington to farm a special new oyster called Golden Fog that's exclusive to the restaurant. Mild and plump, Golden Fog oysters are a little sweet and a little briny—we’re calling it an elegant addition to the oyster world.
