Try This Quick 3-Ingredient Breakfast When You're Feeling Backed Up

chia 728

When you’re feeling backed up, jumping out of bed to greet the day is the absolute last thing you want to do. But resist the urge to pull the covers over your head and hit snooze. Tricia Williams, culinary nutritionist and founder of Food Matters NYC, has a smart solution: whip up a batch of this easy three-ingredient chia pudding the night before. It has 7 grams of fiber per serving (the recipe makes four), so it might help you feel more regular by lunchtime.

What you need: 2 cups coconut milk, 1/2 cup chia seeds and 1 tablespoon maple syrup.

What you do: Place chia seeds, coconut milk and maple syrup in a bowl. Whisk until thoroughly combined. Allow the mixture to sit out at room temperature for about four hours to allow chia seeds to bloom. Place the mixture in an airtight container and refrigerate. Serve chilled, and top with fruit or nuts, if desired.
