In case you've been living under a rock, we'll alert you to the fact that it's been rather warm this spring. The best way to celebrate such mild temperatures? Ice cream, of course!

Our newest straight-from-the-carton indulgence comes courtesy of Phin & Phebes, a two-year-old Brooklyn company making some of the best ice cream we've tried (and yes, we've tried a lot of ice cream).

The brainchild of longtime friends Jess Eddy and Crista Freeman, Phin & Phebes sources all its dairy from an award-winning upstate farming co-op, and the result is a texture that's super creamy and only gets better as it melts.

But what really excites us are the surprising and complex flavors: spicy gingersnap, coconut and key lime with graham-cracker crumbs, banana pudding with wafers, Vietnamese iced coffee with chicory and cardamom and (our favorite) a vanilla cinnamon that tastes pretty much like the best chai latte you've ever ordered.

Though Phin & Phebes started out selling its frozen concoctions at Brooklyn food fairs and specialty groceries, we're happy to report that a number of Manhattan and New Jersey stores are also now carrying the spoon-ready goods.
